Looking for Balance

Pretty new to the Keto thing. Started off really just trying to cut out the junk carbs like candy, chips, mashed potatoes and stuff. Then I went all in and I started dropping the weight. I went from 274# in Dec 2023 to right about 216# today (Apr 26). Now I have a colonoscopy coming up in 2 weeks and all of the prep foods are white bread, rice, Mac n cheese, pasta. Ugh!  I need some ideas STAT!
