Excellent point. Pork belly is another good example of where the fat difference is very significant. Playing devil's advocate though, the cooked values will depend on how it's cooked.

The drop-down to the right of MY FOODS (not My Week) shows all the micro-nutrients. At least it does on the (my) paid-for version. I cannot say for the free version.

It does this already. In the In Depth tab, the dropdown to the right of My Foods (defaults to Net Carbs) allows you to select any nutrient to show which foods gave what contribution to that day.
