Skillet Pizza
1/2 tsp EVOO
1 Mission Carb Balance 6” Flour Tortilla 4 carbs each
1 heaping TBS Sugar Free Sauce
3 or 4 Pepperoni
1/4 Cup Shredded Mozzarella
Put EVOO in skillet and spread around. Heat oil and lay the tortilla in the pan. Place sauce, pepperoni and mozzarella on one half. Lift tortilla with tongs or spatula to check browning. When Golden, turn the plain 1/2 over the filling. Remove pan from heat and let sit to melt cheese. Remove to plate. When cooled you can eat with fingers or serve on plate. Alternatively, cover entire tortilla like a pizza when crust is nearly done on bottom. Cover with a lid, remove from heat and allow to melt cheese. I think I could eat one for lunch every day.
