A close shave & what saved me?

Our house full of guests had all gone, not a wrong crumb had past my lips since 05:30hrs... what happened to me last night? ~ for the first time since starting Keto I was on the point of eating homemade super soft apple pie & homemade crisp lemon & ginger biscuits..... you can tell how close I came because I was even thinking about their textures! I know what they taste like, I have eaten them too often in the past.

When, into my head, popped Keto-Christina & her wise words on YouTube “Doing Keto 100% is easier than just 99% ~ once you cave in you will never have that full peace of mind again, you will never quite trust yourself.” These words stopped me right in my tracks ~ so I thought I would share them. I didn’t want to throw away peace of mind. I had already convinced myself I was going to do this, I had tried reasoning to myself & failed, I had thought of the amount I would have and was worried I might go on & on.... I WAS GOING TO EAT THEM.

    wendyhallmark I managed 2 wks in Tenerife on my weeks 3 & 4 lossy almost 5 lbs it can be done, planning is great strategy 🙌

    Oh my, yes! Though we also need to be able to forgive ourselves if/when we DO slip. :)

     I suddenly got bad ice cream craving last night (my greatest food love). What saved me was a recipe I found online for a cocoa-and-Splenda-flavored whipped cream intended to be frozen but that I ate half of (to exactly max out my carbs for the day) before putting in the freezer. Think I need to plan ahead for such moments and always have some in the freezer.

    Joyful I nearly bought an ice cream machine from Amazon as I had a craving for ice cream one day early on.... I even thought berries & double (heavy) cream, no sweetener artificial or otherwise for me though. I was eating that in my mind.... you are right we will slip but we mustn’t waste energy beating ourselves up.

  • Agreed.  I have a planned "slip" for Christmas.  My husband and I are going on a short vacation, and one of the events (planned before my low-carb endeavor) is a sampling of Christmas delicacies from around the world.  I'm trying to get my head around forgiving myself in advance.  It's strange the relationship that we develop with food!

    wendyhallmark you don’t need to forgive yourself, you just need to be prepared for the crazy eating that can follow it. Just take one day at a time. I agree our relationship with food is multiple levels of confusion 😧 & emotions.

    badmojomn well I don’t see why not.... my dream was strawberries for natural sweetness & double cream.... what else would you need? 😂🤣😂🤣

    Joanna So what if you creamed fresh strawberries and then put that in the ice cream maker. Then at the end fold in some chunked strawberries ? I have never used an ice cream machine before. Would that sweeten it "just enough" do you think? Heck. I'm gonna get a machine. I sure am missing some sort of ice cream.

    I think over the next couple months, there will be a lot of this. Good to strategize ahead of time like seeing here. Also good to just forgive ourselves ahead of time already. Slipping this around family reunions and holidays is most forgivable !!! Not only that, the holidays will all be over soon !  Then, we might agree — NO More !!

    badmojomn from what I have read, it gets very solid with just double cream can you borrow a machine to experiment? Setting it to gelato or sorbet.....? Our imaginations are running away with us.  😋👅 I don’t know anyone with a machine and I have spent this month’s wages already....... treated myself to 3 new pieces of cashmere to wear oh luxury ~ it’s getting cold here. (I don’t earn that much only working very part time.)

    Joanna Nobody I know has one. If I have to use half and half after my experiment possibly fails then I will. Totally worth trying to work this out.

    Joannafinally made Keto ice cream with powdered erythritol. Let’s just say I wasn’t a fan of the thick feel of cream on the roof of my mouth. I made vanilla and the flavor was great but I used heavy whipping cream and my ice cream maker did good. I need to find “ heavy cream” without the whip in it, I guess heavy whipping cream may have some stabilizers in it, giving it that heavy feel in the mouth. I sadly ended up throwing it away. I can’t seem to find just “heavy cream” anywhere.

    Badmojomn 🙇♀️😥 so sorry to hear that. I went in search of double cream in the USA and found this info which I guess explains the problem...

     "heavy cream" is heat-treated and tastes a wee bit horrible as a result....  
    In the UK we can get fresh double cream (which is, as the title suggests, fresh, and pasteurised, but not ultra heat treated like heavy cream). It has a higher fat content than heavy cream - it is delicious and readily available.
    I wonder whether there are any (dairies, delicatessens, farms?) where it's possible to get cream that hasn't been through the ultra heat treating process with the subsequent flavour issue?
    Any help on this would be much appreciated. For all would be Keto ice cream makers 😋😋😋

    Badmojomn I saw a YouTube with someone adding a cup of unsweetened almond milk to lighten the texture. Since we first talked about Keto ice cream (so long ago!) I have had many a slip up involving ice cream ~ 99% of them were a disappointment, I realise I have a very addictive nature, once an idea is lodged in my head that involves ‘sweet carb’ things...

    still 16lbs to goal but tackling it with a relaxed approach, I look and feel so much better. Being well is my main goal, slim is the egg to my bacon 😀

  • I have a recipe, Its not ice cream,  but kind of tastes like a milk shake, maybe a little icier. I use 6 tbsp of unsweetened vanilla almond milk, 2 tbsp heavy whipping cream, 1/4 teaspoon vanilla, 4 packets stevia (and if I want it chocolate instead of vanilla then 2 tsp unsweetened cocoa powder.) blend all ingredients with ice and it is so good. Only two carbs and it’s a great treat. I was doing it with strawberries, too and no cocoa, and that was really good but I found I seem to be one of those people who don’t do as well when I have berries, even the few it was so I took them out and had just vanilla. After not having anything sweet for so long it is amazing. :)

    Joanna I’ll have to try again but I need to find non whipping heavy cream. I also went by a recipe that was a custard like Ice cream with eggs yolks. Maybe that was the culprit of having that film on my mouth? But I did some research, the heavy whipping cream has stabilizers that may give that mouth feel after been frozen also. So, idk.
