Brussels Sprouts Casserole (Amy Ramos, Complete Keto Diet For Beginners

Ingredients

Bacon,   6-½ thick sliced - 6" long

Brussels Sprouts,   1 pound

Swiss Cheese,     1 cup, grated

Heavy Whipping Cream ,   ¾ cup

Salt,    ¼ teaspoon

Black Pepper, Ground,   ¼ teaspoon

 

Instructions
1. Preheat oven to 400 F
2. Blanch Brussels sprouts for 10 minutes then drain. When cool enough to handle, cut into fourths.
3. Cook bacon until crisp.
4. Reserve 1Tbsp bacon grease to to grease casserole dish. Grease casserole dish. Chop bacon.
5. Toss blanched sprouts with bacon and 1/2 cup of cheese. Put in casserole dish.
6. Pour cream over sprouts and top with remaining 1/2 cup of cheese.
7. Bake until the cheese is melted and lightly browned and sprouts are heated through, about 20-25 minutes.
