Lazy cooking 馃槀
2 quick meals for lazy cooks.... I confess.
Both Keto.
I won鈥檛 add measurements of the ingredients apart from the bread as our own taste buds & macros vary.
picture one - 8 minutes
pan fried, wild caught Cod with dill dressing & saut茅ed organic chestnut mushrooms
Melted organic butter in med hot frying pan, added cod skin side down, added cracked black pepper & lemon zest & juice. 5 minutes later turned it over & repeated seasoning.
....meanwhile added more butter & tossed in the mushrooms.
chopped some fresh dill, added a knob of butter, Himalayan pink rock salt & more black pepper mixed it all up.
2nd side of fish ready after 3 minutes placed on warmed plate, with the mushrooms added dill mixture & some double cream to the pan stirred briskly & topped the fish. One pan to wash up. 馃檶馃構 plate went to the dishwasher..

luxury scrambled eggs on 90 second bread(toasted)
Bread
Melt 15g butter in a microwaveable dish, (I used a circular bowl) that isn鈥檛 too big as you will be cooking your bread in it)
once melted quickly stir in 30g ground almonds & 5g of milled linseed or flax ~ if you don鈥檛 have these make 35g of ground almonds.
Himalyan pink rock salt to taste, I like quite a generous pinch...
seive in half a teaspoon of baking powder (makes it rise nicely)
mix in a small egg & once incorporated put in the microwave
90 seconds on high ( I do mine for 85 as it鈥檚 powerful)
tip it out to cool, smells eggy but.... cut it in half to make 2 thinner slices, toast it and butter it & top with bacon & luxury scrambled eggs 馃構馃構
scrambled eggs 4 minutes
use as many or as few eggs as you want
add cracked black pepper, 2 tsps of organic almond oil & 2 tablespoons of double (heavy) cream. Cook on a medium heat to the consistency you prefer, place on toast add some salt & more black pepper, sprinkle with wild watercress (okay not necessarily) and enjoy.
