Keto baking- fail?

I’m mostly strict keto. I occasionally bake a keto friendly item. Anything from soft pretzels to pumpkin muffins, etc.

Every time I do this, I bloat! I have no idea why.

I can eat Lily’s chocolates until I’m sick, without issue. Eggs don’t make me bloat. I’m wondering if it has to do with baking powder/soda or the almond or coconut flours.

 

Anyone else have this issue?
