What’s for breakfast?

What do you all eat for breakfast besides eggs? I need a bit of variety. Please help.

  • I eat two mozzarella string cheese sticks, an avocado (seasoned) and a cup of coffee.

    1 cup unsweetened almond milk

    100gm greek yoghurt

    50 gm blackberries

    6 ice cubes

    20 gm black chia seeds

    Add sweetener if wanted.

    Grammie we eat breakfast bowls often, same ingredients as you mentioned, plus avocado and salsa or hot sauce. If I have leftover bacon or sausage (sometimes cook large batches for a few days’ worth), I’ll just microwave the eggs... so easy! I can’t believe how filling one of those bowls is.

    Try adding instant coffee powder (I use Via from Starbucks) to a protein shake, either chocolate or vanilla... SO GOOD!! Peanut butter is also good with chocolate... I may try some banana extract next! 🍌

    Egg pie ~ scrambled eggs with spinach & feta this morning ~ spray Pyrex dish with coconut oil ~ bake at 375 until set. Depends on number of eggs ~ I do 8 eggs egg pie for 30min

    pdljmpr me too, I make a 'lite' version of bulletproof coffee for the morning, with 1Tbsp cream, 1tsp butter, and 1/2 tsp coconut oil, froth it up in a blender, yum!  checked with a meter and it doesnt raise blood glucose. Then I eat two meals a day, lunch and dinner (no snacking) approx 6 hrs apart...

    You don’t have to have traditional breakfast foods for breakfast. Sometimes I just have cheese and flackers. I found a yogurt that has only 2g of carbs. It’s called Two Good. If I can get it on my island, I’m sure it’s everywhere! (I like to mix in berries or some keto granola).  I’ve also noticed there’s skyr here and so I’m guessing it must be getting big on the mainland US as well— some brands have very low carbs. We ate it every day when visiting Iceland last year.  If I know my lunch and dinner are going to truly be very low carb, then I may have some cottage cheese as mentioned. I like mine plain but you could add a few berries to that as well.   Sometimes I’ll have just sausage. There’s a quick bar that I found at Costco that’s called a Ratio bar and it doesn’t affect my blood sugar. It says 2net carbs. I’m always leery of processed foods and their marketing but it does good in a pinch. If I don’t think my breakfast is filling enough, I’ll grab a 1/4c of nuts to supplement.   When I was growing up, my mom would get incited bacon from a local butcher that was thick cut and make a heartier version of a BLT. Using a keto bread or chaffle  would work for that. I’ve been thinking about trying that recently.  I, too, am getting tired of eggs. When I do make them, I try to mix up the ways. One of my favorite things is to mix scrambled eggs and 2oz leftover steak (cut into bite sized pieces) and use a tsp of A1 in droplets over it. Just enough flavor difference to drown out the eggs.  Or I’ll make that into a sandwich with keto bread and add a bit of mayo instead of A1.

    I found an easy recipe here on Carb Manager.  I tweaked it a bit and changed the name!  It really tastes good and has helped me make it through several breakfasts! It makes two servings of 2 carbs each!
     

    Razza-Mug Muffin

    1 Tbsp Butter
    2 Tbsp Cream Cheese
    2 Tbsp Coconut Flour
    1 tsp Vanilla Extract
    1/2 tsp Baking Powder
    1 Raw Egg
    5 Raspberries, Fresh, cut in half
    1 packet Splenda

    Instructions:  In a coffee mug, melt butter and cream cheese in microwave for 30 seconds. Mix well. Add coconut flour, baking powder, vanilla extract, and Splenda. Mix well. Add raw egg and mix. Cut raspberries in half and add to mixture. Microwave for 1.5 minutes. Drizzle 1 tsp sugar-free syrup on top.   (opt.)
    MAKES 2 SERVINGS!

    One of my favorites, but I don’t do often is this (Toasted Whole Wheat Bread with mashed Avocado (mixed with lemon), Basil Pesto  topped with Sweet Tomatoes), I drizzle lemon over it.

  • Egglife wraps with cheese and meat, low carb “porridge” from the app recipes, chia pudding, bacon and more bacon, steak, almond bread in a mug, keto friendly waffles made with coconut flour, avocado and bacon, sausages.  It’s hard to break the conditioning for what we think breakfast should be.
