Air Fryer Avocado Fries

Ingredients:

Avocado (at least 2, dependent upon size) - not too soft/overripe

1/2 cup Almond Flour

1 tsp Cajun (or other desired) seasoning mix

1/2 tsp Sea salt

Raw egg white

2 TBSP Water

2 cups Fried pork rinds, ground fine in blender or food processor (these will be your "bread crumbs")

1 tsp Garlic powder

1/2 tsp Cayenne pepper

Instructions: 1. Cut avocados in half, remove pit. Cut into 1/4" thick, long slices and remove from skin and set aside. 2. Prep 3 dipping bowls: 1) almond flour, desired spice, salt; 2) whisked egg with water; 3) pork rinds, garlic powder, cayenne 3. Dip each slice into bowl 1 just to coat. 4. Dip into bowl 2 and shake off excess, then coat thoroughly in bowl 3. Be gentle so as not to break avocado pieces. 5. Place single layer in air fryer and cook at 400F for 7 minutes. Check if coating is to desired crunchiness; if not, coo for another 2 minutes. 6. Remove to rack. These are GREAT dipped in ranch or any other dressing/sauce of your choice!
