Why does a 1/3 lb. raw hamburger patty (80% lean, 20% fat) have more calories, fat grams, and protein grams than a broiled one?

  • You lose water and some fat on the cooking process.

  •  I accidentally asked the question wrong (of course). I meant to ask, Why does a 1/3 lb. raw hamburger patty (80% lean, 20% fat) have FEWER , fat grams, and protein grams than a BROILED one?

Info on the app says the above size and kind of hamburger RAW patty has 19gm fat; 27 grams protein; and 282 calories.

For the same size and kind of patty BROILED the app says has 27 gm fat; 39 gm protein; and 410 calories.

  • Belynda Wilson I would question the broiling process there. That sounds odd. What are they adding?

nutritional count for foods generally uses raw weight. so the 1/3 lb burger will be 1/3 lb raw and cook down to something like 1/4 lb.

I suspect the 1/3 lb broiled burger was post broiling. so it would weighed more raw.
