Keto Cream Cheese Pancakes

Ingredients

 

cream cheese 2 oz / 60g

1/3 cup Cream Cheese 2 oz / 60g (full fat)

coconut flour

1/4 cup Coconut Flour

2 large eggs

1 tsp Baking Powder

1 tsp Vanilla Extract

1/4 tsp LIquid Stevia or 1/4 cup sweetener of choice

almond milk 90 ml

3  oz  Unsweetened Almond Milk 90 ml (or milk of choice)

 

1 tsp Coconut oil for frying (or ghee )

 

Mix all the ingredients (except coconut oil ) in a blender until smooth . It will look a bit runny but will thicken after sitting a few minutes . One trick I learned was to pour 1/4 of the batter at a time and rotate the pan so the batter will spread out . This makes for even cooking as the middle will rise slightly . If your pan is hot enough it should take about 30-45 seconds for the bubbles to pop . Then flip for another 30 seconds .

They come out golden brown and are delicious with just butter on them . They are also very filling . Makes 4 cakes with 2 for a serving . Enjoy .
