I don’t recommend going crazy on soy products (just saying because I was vegetarian for 20 years and I know a lot of vegetarians including myself who ate a lot of soy products -ie: fake meat) as a protein substitute. Soy can mess with your hormones and exasperate health issues. Do you eat eggs? This will be difficult if not. Hard core low carb folk don’t even eat a lot of veggies because they are high in carbs (I don’t agree with this- veggies are so healthy) I think you should concentrate more on a high fat moderate protein diet or a modified keto.
