Omelette in a Mug - Quick, Filling, and only 3g Carbs

This is a recipe I used to make a lot and loved. It only takes about 10 minutes total--prep and cook time--and is very filling and delicious. It is a one serving only recipe, so it's great for quick breakfasts by yourself.

You will need:

2 eggs, 

1 tbs milk,

1 tbs grated cheese,

1 tbs finely chopped green peppers or any other low carb vegetable(s) of your choosing,

and a pinch of salt and pepper

 

After spraying the mug with cooking spray, whisk the ingredients together in a large mug and microwave at 20-30 second intervals while stirring in between. Here is a great website that gives more in depth instructions:

    Wow it's so easy! Thank you for sharing I had it for lunch with a green bell pepper from my garden (last few, for us here in Texas). I could eat breakfast 🍳 anytime of the day. 😁

    I make something like these but fill a muffin tin with the ingredients. Bake them at 350 degrees for 20 minutes. Take them out of the oven and top with shredded  cheddar cheese and bake another 10 minutes. Then I freeze them so I have breakfast for 12 days.

  • Pampered Chef makes a great ceramic microwave cooker. 2 eggs take 1 min 10 secs. They have a lot of recipes for it too.
