Hi - My Introduction

I am Beth.  A Pre-K teacher, wife, Christian, runner girl, bungee diva, gym cheerleader .... Very active.  I am 47 years young and trying to live my best and healthiest life.  I have been eating Keto for about 2 months now.  This is my second time doing Keto; I was successful a few years back. 

When I was eating Keto my first go-round about 3 years ago, I was strict Keto.  I really tried to strictly limit carbs and consumed lots of higher fat red meats, bacon, eggs, fatty morning sausage, butter, MCT oil .... Although I lost 17 pounds doing this, I just was not comfortable consuming the fatty red meats, bacon, and the amount of butter I put on things.  This time, I am being purposeful with my fats.  I am eating whole milk cottage cheese for breakfast with flaxseed and a few berries, 1/2 an avocado, eggs, chicken, tuna, olive oil or avocado based mayo, chicken sausage ..... This time, I am not eating as MUCH fat (65 % fat), not AS strict on my carbs (15 %) and moderate protein (20 %).  Subtracting fiber, I average @30 carbs a day.

The things crossing my mind - fat is fat, right?  I am not sure if my thinking is logical.  I am doing a lot of research on doing a better Keto, but just like my first go round with this life style, there are still so many questions.  The Keto energy I was excited to experience again is still not there...

Anyway, back to the introduction - I love being active.  I am active at least 5 days a week.  I run 3 days a week.  My shorter runs are 4 - 5 miles, my long weekend runs are now at about 10 miles.  I do Bungee classes at my gym twice a week, walk daily, participate in Spin and Zumba, and lift weights on and off throughout the week.  I have struggled with weight all of my life and I feel that has affected me and how I look at food.  

As of recent, I have been undergoing testing for Autoimmune "stuff" ... a myriad of testing, most of which is coming back negative.  I have a history of a higher RA Factor and last test, my ANA was positive.  I am currently being tested for small fiber neuropathy, but the Neurologist is also looking at my vitamins B, D (apparently I was vitamin D deficient last blood panel), and for type 2 diabetes.  I am not obese, but I do have some weight to lose (@ 20 pounds).  Diabetes runs in my family, so I am a little curious as to how that will turn out.  

All I want to be is healthy and active.  Energy is not my friend as of recent, but pushing through.  

So, this introduction is all over the place, but that is the story of my life.  I am fun loving, active, and one hot mess who just wants to make this Keto work.  :-)

  • Type 2 diabetes is not hereditary. It's due to insulin resistance. Since you are not severely overweight and you used to be on keto my guess is you should be negative for type 2. 

    All fats are not equal. You definitely want to stay away from trans fat. Which comes from man made hydrogenated vegetable oils or margarine. All the fats you listed above are good though.
