Keto Bacon Avocado Mozzarella Salad- EZ Trucker/Camper style

Bacon Avocado Mozzarella Salad-
No water needed, makes two servings.
EZ Trucker/Camper style:

As a long haul trucker putting together recipes on the fly can be challenging.  I don't have running water, and I assemble ingredients on my bed.  This recipe can be made ahead of time, but in that case I'd add a spritz of lime juice to keep the avocado looking it's best.
I would think adding fresh basil would also be wonderful, but I haven't tried it yet.

Ingredients-
-two packets of Pederson's uncured bacon OR 4 thin strips pre-cooked bacon (chewy), the cooked total should be 34 grams (1.2 oz). 
-two thirds package of BelGioioso fresh Mozzarella slices
-1 avocado 
-2 green onions
-6 grape tomatoes  
-Boar's Head deli dressing 
-salt & pepper to taste
-spritz of lime juice (optional)

Tools-
-cooler
-sharp knife
-scissors 
-one each plastic knife, fork, & spoon
-Tupperware container

Using scissors, snip green onions finely into Tupperware.
Add the tomatoes 
Follow with the bacon but snip into bite size pieces.
Add Boar's Head deli dressing, close lid and shake vigorously.
Snip mozzarella slices in pieces with scissors and add to Tupperware.
Add salt and pepper.
Close lid and shake again.
Use sharp knife to cut avocado lengthwise in half, remove pit.
Use plastic knife to slice just the avocado flesh lengthwise then crosswise.
Use plastic spoon to scoop out avocado into Tupperware and fold gently into salad.
 

Voilá 

*tip- clean green onion by snipping off the roots and a few inches of the top with scissors.  Peel the outside layer(s) to reveal the naturally clean inner onion- no water required.
