Weight loss can be carb-licated...

I struggled with obesity for over 12 years. At my heaviest I weighed 317.  I tried so many diets over the years. Some diets were the new,  revolutionary way to eat. Others were premade foods delivered right to my door (not pizza...well...sometimes). Nothing worked until I changed 3 things. First, I dropped my carb intake to 20g or less per day. Second, I fluctuated my calories throughout the week. Four to five days a week I ate around 1,400 calories. The remaining days I ate 1,000 calories. Was this hard? Yes, especially at first when I was use to eating 3,000 or more calories per day. It did get a bit easier, especially as I watched the weight drop. Did I cheat? You bet I did! A lot more than I care to think about.  And finally, I only eat once per day. Talk about punishment! Still, each week the weight dropped, and I wasn't even exercising. This morning I weighed 178 pounds. I am a 6'1" tall man, so at this weight I am finally a normal weight. I plan on dropping 8 more pounds before the really complicated part of my diet happens, which is how do I eat normally? For over a decade I have either overeaten or undereaten . Healthy eating is a mystery, sort of. I know the healthy eating I want to do, and that's Japanese cuisine! The best food in the world! I know so much about it, and I can cook it well too. What I don't know is how to begin adopting this way of eating without gaining a lot of weight, or not bloating up 10 pounds like every other time I do when I eat a lot of carbs. The Japanese diet I know and love is heavy in carbs, which carb-licates things. I suspect no way exists to adopt this diet without some initial negative effects. Funny - I did a lot of research and trial and error to find the weight loss method that would work for me and now I have to research and trial and error all over again to figure out how to eat a healthy Japanese diet without too much initial detriment. Oh, life...
