Saturated vs Unsaturated Fat?

I'm new to the keto diet.  What types of fat should I be eating to get the best results?

Real grass-fed butter, coconut butter, coconut oil, flax oil, olive oil, avocado oil, grass-fed ghee, European cheeses ( tend to have the A2 protein rather than the A1 protein the US has and many people are sensitive to), small amounts of expeller-pressed oils - cook with coconut, safflower, olive and peanut oils.  Use flax, olive, sesame seed, sunflower and walnut oils on salads.  Avocados, cream cheese, nut butters, seeds like pumpkin and sunflower.  Do not eat any hydrogenated fats or partially hydrogenated oils.  Stay away from deep-fried foods, especially in restaurants.

A clarification - when cooking, I wouldn't use olive oil because it doesn't do well with heat.  I'd use avocado oil or coconut oil instead.

Also, fatty meats:  chicken thighs, ribs, Boston Butt, Steak, Ground Beef etc.  Fatty fish such as salmon. Eggs. Low carb nuts i.e. macadamia, pecans, almonds, walnuts.  Full fat dairy such as heavy whipping cream and sour cream.
