Easter gravy

I’m a turkey girl so I make my Easter gravy with the drippings of the seasoned turkey, bring to small boil, add cream cheese, chicken base and at the end, dab of butter- add some heavy whipping cream to richen that up. Add black pepper and alittle extra salt if needed. Not sure about ham gravy, could be same concept but the ham if candied, will have an odd taste even with hambase used.  I think I tried that before and thegravy was sweet.  With a beef roast, follow same as turkey just add a little beef base, good quality to taste.
