I’m not a doctor so I’m hesitant to gives advice to a diabetic, as I don’t know enough about the disease. If your blood sugar gets low that sounds like it may be dangerous for you. Perhaps you should talk to your doc.

that being said....I hike a lot and find that eating low carb snacks while hiking, works very well for sustained energy. In fact, I have more energy while hiking now; than I ever did when trying to fuel with carbs. I can hike much farther and faster in a day while burning fat. Don’t tire as easily but I need to make sure I take plenty of water/have water sources that I can filter along the way.

If on day hikes ill take meats, or hard boiled  eggs that were cooked from the night before but I put them on a chem ice pack so I don’t risk bacteria. You can dirty keto for convenience with low carb beef jerky, slim Jim’s, pepperoni, precooked bacon, etc. low glycemic fruits like avocado, raspberries, blackberries & honeydew melon. I also take nuts (pecans, almonds, walnuts)

I would think you could make a protein shake that has enough glucose (for your low blood sugar need) to sustain you. I blend 1/4 cup of raspberries or blackberries in mine but you may needs higher glycemic fruits in yours bcz of the disease. IDK but I’m just trying to help you brainstorm. Best of success!
