Jalapeno Chicken Salad
- 10 slices crispy bacon (crumbled)
- 2 jalapenos diced (more if you like it hot, less if you don't)
- 5 green onions chopped
- 4 cups cooked/cubed chicken (about 1.5 pounds - I used breast tenders)
- 1 cup shredded cheddar cheese
- 4 oz cream cheese (I soften for 20 seconds in the microwave)
- 1/2 cup mayo
- Salt & Pepper to taste
- In a bowl add chicken, bacon, jalapenos, onions and cheddar cheese
- Add mayo & cream cheese (I pre-mixed them before adding)
- Stir until completely mixed; add salt & pepper to taste
- Enjoy or refrigerate until ready to eat
- Top with extra bacon or give it a kick with a drizzle with hot sauce!
