Might want to research Keto, dry skin and electrolytes. When you initially deprive your body of carbohydrates, it will deplete your glycogen stores in your muscles and liver. Your body stores glycogen and water in roughly a 3:1 ratio. As you deplete your glycogen, your body dumps the stored water and with it, electrolytes. That may or may not be what's happening here, but it's worth looking into.
