Popsicle conversion fail

Hi,

I tried revising my mom's popsicle recipe which I've had since the 60s, into a low carb version. Actually this was a zero carb.

The original was: 1 packet unsweetened kool-aid, 1 small box jello, 1 cup sugar, 2 cups boiling water, 2 cups cold water.

I tried using 1 box sugar free jello, 1 packet sugar free drink mix (which made 2 quarts, same as the kool-aid) and no sugar.

They turned out hard as a rock, hard as ice cubes. The originals are very soft.

Any thoughts why the texture is so different? The taste is the same it seemed. I know one time I accidentally used sugar free jello and there was no difference.

I miss ice cream and such and thought this might be a good substitute but it was  huge fail. Thanks.

  • Sounds like a chemistry problem. All those ingredients are basically chemicals. Research Keto ice cream. You can have everything good but sweetners, but most recipes use some low-carb sweetner. Heavy cream, almond milk, fruit or flavoring, vanilla and maybe a sweetner.
