Net carbs is simply total carbs minus fiber. Net carbs is the number that matters when figuring your carb intake for a day. For instance, there is a sweetner made of chicory root that has 97 grams of carbs per 100 grams of sweetner or about 3.5 tbls. Normally that would be a lot of carbs for one's daily intake on a ketogenic diet. But the same sweetener also has 96 grams of fiber leaving you with 1 gram of carbs consumed, since the fiber just passes through you. 🙂
