Over / under range

I read some where that a good range to stick to is 10 mg. Of fat/proteins over OR under, per day, is okay. Is this true? I have days that I  am between 7 to 2 grams  over/under. 

I'm 1 week in and 3 lbs. Down.  Feel great. Still trying to get it all dialed in though.
