I make pancakes. 2oz cream cheese, 2 eggs, cinnamon and a splash of vanilla. I blend it in my magic bullet. It makes more of a crepe so make them small so you can turn them easily. I too with various toppings. I sometimes microwave fruit and blend it a little and use that. Or any other topping you want.

I’m kinda in the same boat. I can only eat so many hard boiled eggs you know. But I baked a halibut the other night and had a 4x2 inch thick piece left. So I thought of something that my portugease Mom makes and it literally 1 carb for 8 of them. I got a medium bowl and shredded the leftover halibut in the bowl like you would for tuna salad. Then in a small bowl I beat 3 eggs, added 1/2 tspn of Lawerys Garlic Salt with parsley, a dash of black pepper, and 1/4 cup of chopped fresh chives. Back to the halibut, add 2 tbspn of finely chopped fresh parsley. Mix the eggs mixture in the in the halibut. Stir well until all mixed. Get a nonstick fry pan add 2 tbspns of butter, oil or ghee. Whatever you prefer to fry with. Put the heat at medium or4 or 5 on the burner. With a small gravy ladle or a large spoon, place the mixture in small dollups in the frypan. Like little pancakes about 3 in. dia. Fry on one side for about a minute or 2 then flip them on the other side. Don’t walk away, keep an eye on the because stovetops may very. Once cooked, place them on a plate with a paper towel to draw off the excess oils. Makes about 8 to 10. Great to have for lunch and with a dollop of sour cream on the side, low-fat of course. shanjones To toss up the tradional fried eggs, I make a smashed, not chopped egg salad with lots of celery and a little dill pickle. You can add black olives also. Real mayo, Dijon mustard and some minced or dried onion and seasonings. I’ll admit I may put in a tiny bit of a sweet pickle. This is splendid for breakfast, hearty and filling. Total ketoville with this and if you make it just right, you won’t have leftovers for long and will have to make another batch.
