Type 2 Vegetarian

Hello,

I was diagnosed with type 2 about 2 months ago.  I have tried hard to follow a keto diet, starting at 105 ish kilos. I am now  94.1.  Slow and steady I suppose.  I am keen to  continue my weight loss with vegetarian recipes.  I would love to see what others are doing.

  • Made a vegetarian Jamaican stew (recipe was online)with diced tomatoes, garbanzo beans, black beans, onions, salt, crushed red pepper, curry, allspice. Not Keto friendly, more a low carb friendly dish but the beans have plenty of carbs so must watch portion sizes. Wanted to use garbanzo beans since they are a complete protein with all the good stuff.
