Dozen eggs, breakfast sausage, half cup shredded cheese. Fry sausage, set aside. Whisk eggs. After sausage is cooled mix with eggs and cheese. Pour into muffin pan and bake at 350 degrees. Keep an eye on them. They will rise and brown. Now you have low carb breakfast muffins. They freeze and reheat in the microwave well. Kids love them too!

Today I tried a flax seed mug muffin, and it was not bad. Made for a nice change and was slightly sweet.
