Homemade Mayonnaise

So I've been making Homemade Mayonnaise which I think is great, my question is for other's that are doing the same is " how can you tell if it has gone bad". I've read that you can keep it anywhere from  a week to a month!!!  That's quite a difference & not sure how you tell when it's time to throw it away & make a new batch?  Is there a way that you can tell that it is no longer any good?

    Following but I think this may range in temp of fridge, where in fridge you store it. Could prob google it. Homemade mayo kind of scares me in this factor because I can store my Helmans for months.

    I like Helmans but thought I would try the Paleo  homemade  it really is easy to make & has a very fresh taste where as Helmans has all the preservatives in it & I'm trying to steer clear of that hoping it will help in some way of the damage  my Celiac disease  has done to my stomach, I guess what I need to do is cut my recipe in half & just keep it for a week & the heck with it, I just hate to waste all of that olive oil lol.. I keep it in the back of the fridge of course I'm also using fresh eggs 馃槉

  • I try and use it with in a week and with 5 in the house it鈥檚 used up within that time usually.
