Your post reminds me of an old Monty Python skit. Check out a guy in the forums going by Pat_F. A couple of weeks ago, he had a post that really made sense to me. Essentially, the macros for carbs and fats should be seen as maximum limits and the macro for protein, a minimum limit. If you think about it, if the goal of being on a keto diet is to burn fat, why would you be adding additional fat for the body to burn instead of burning "your fat.
His suggestion was to get as close as you can to your proteins, stay below your carbs, and don't be too concerned about the fats, but stay well within the "fat limit". Also, keep watch on the calorie count.
On the days where I am short on protein, my go to's are Premier Protein shakes (30g protein, 3g fat, 2 net carbs for the 11 oz bottle in the vanilla flavor) or Pork Rinds, (18g protein, 9g fat, and 0 carbs per ounce). It is surprising how much 1 oz of pork rinds are.
