your thoughts?

Hello Folks, I have been  trying to follow ketosis diet for the past 2 months. I would like to practice consuming vegeterian diet 2 days on a given week (just a break from meat). Any suggestions on vegeterian keto dinner options?

I have been ricing cauliflower and getting some high fat indian chesse based curry (a gravy that I would pour over the riced c.flower) but that is all I know. Any veggies that I am not looking at, which has high fat? any options other than cheese? Appreciate your thoughts and ideas!

    Tempeh or tofu are options, if you do soy. I enjoy a tofu stirfry using low carb soy sauce.
