Need help modifying cookie recipe

Can someone help me modify this recipe to make it keto?

1-1/2   cups all-purpose flour

3/4   teaspoon baking soda

2/3   cup butter, softened

1/2   cup packed brown sugar

3   tablespoons white sugar

1   (3.4 ounce) package instant pudding

2   eggs

1   teaspoon vanilla extract

1   cup chips

As replacements I have:

Sugar Free pudding

Swerve brown sugar

Swerve granulated sugar

Almond flour or coconut flour

Lily's chocolate chips

Xanthan gum

  • My thoughts: I think you are on the right track. I would use more of the Almond Flour and add a bit of Coconut Flour since the latter does not make as thick a batter as the former. The Lilly's chocolate chips, what kind are you considering? I usually use half and half of the dark and semi-sweet versions.

    Just a difference of palates, but I think the Swerve sugar quantities are a bit much, but that is just personal preference.

    Also, just for your consideration, am not sure if you have it available where you are at, but at my local supermarket, I recently found Swerve ready-to-go cookie and cake mixes!

  • I was going to use dark chocolate but I also have semi sweet here.

    I'm just not sure if I should add xanthan gum, and if so, how much? Do all the measurements cover 1 to 1?

  • Lynsie Re: Chocolate - cool! Re: Xanthan Gum - Not sure if this still stands but a while back I had read to add 1 tsp Xanthan Gum per 1 cup flour. I do not have a recipe where I have ever used more than a teaspoon, come to think of it, lol. Just use a teaspoon then re-evaluate for the next time you use the recipe.馃榾
