Starting weight is your weight when you started. Current weight is what it is now. At the beginning they are the same. After a while, current weight will be less than starting weight.
In order to lose weight, you need to eat fewer calories than you burn daily. That's different for everyone. There are a number of calorie calculators online, I'd suggest doing several and looking at middle ground. Or you can take a simple short cut and choose a number. 1,200 is the lowest recommended caloric goal for women, so that's what I use.
